Hearty Pancake Recipe

Pancake recipe by Lisa ShaoLooking for a pancake recipe that feels like an indulgence but has some depth (i.e. won’t evaporate from your stomach an hour later)? Try these filling mixed flour buttermilk short stacks.

  • 1 Cup All Purpose Flour
  • 1 Cup Whole Wheat Flour
  • 3 Eggs
  • 1 Teaspoon Vanilla
  • 1/3 Cup Sugar
  • 1/2 Cup Milk
  • 1 Cup Buttermilk
  • 1 Teaspoon Baking Soda
  • 1/8 Teaspoon Salt
  • 1 Tablespoon Greek Yogurt
  • Butter for Greasing

Preheat a large griddle on medium-low heat. In a large bowl, combine all flour, baking soda, salt. In a separate bowl, mix eggs, vanilla, sugar, milk, buttermilk, and yogurt. Slowly mix dry ingredients into the wet, being careful not to over mix so your pancakes don’t get tough.

Lightly brush your griddle with butter and cook pancake batches slowly (these take longer than non-whole wheat). Enjoy!
