Hungry? Here’s What’s On The Menu This Week

Caribbean Fusion RecipesThis week for Edit I am delving a little deeper into the flavors of the islands, because, as you might recognize from my colorful styling here on Edit, my island roots are a significant influence in my life. Even though I grew up in urban North Jersey, every year while growing up my beloved grandma (“Mama” to all, even the folks she’d just met at the airport) visited from Trinidad. She always had two suitcases. One full of the most beautiful headcloths and shalwars and another packed with chutneys, spices and sometimes even dried curry fish fry.

I wish I had paid closer attention to Mama’s cooking when she was with us, but one thing is for sure, it is not the type of food that I would have been able to simply recreate anyway. My grandma had a gift. Food was her pride and passion and she was just one of those people who could maneuver flavors with such fluidity. I hope that you’ve had that experience with someone, so you understand when I say her cooking was like pure magic. What amazed me more was how tireless she was. I can’t even describe the process involved in cooking fresh authentic Trini meals three times a day, which she did, without complaint, for her twelve children, their children, and any visitor or friendly stranger that came by.

I am not tireless. With only me and my three little ones, I am bent on finding easier ways to enjoy some home cooked caribbean fare. I am also limited by time and budget, so the menu that I set forth is a selection of things I’m choosing to cook or develop recipes for based on what I have on hand. Aside from what’s listed, you can be sure we are chowing down and subbing in with some quick pasta, fried rice and possibly even tricked out Ramen (with veggies of course).

So here’s what’s on the menu for this week. I’ll post one recipe a day. Comments are always appreciated. I enjoy the company 🙂
