Egg Whites With Roast Chicken and Cheese

editglobal-low-carb-omletteGet ready to bring the morning vigor with this breakfast. This omelette could easily be enough for two, or, if you’re like me, it’s the perfect start-of-the-day meal for one  after an intense round of crossfit.

Yield: Makes 1 Medium Omelette

WIU = “What I’m Using”


  • 1 cup pulled Roast Chicken, (WIU: Fresh Whole Rotisserie Chicken from Costco)
  • 3/4 cup pure EggWhites
  • 1 1/2 slices good American cheese
  • Freshly ground black pepper
  • Dried oregano for sprinkling

In a microwaveable bowl (about cereal bowl size), add the chicken, top with cheese, pour in egg whites and season with 2-3 turns of the pepper grinder.

Microwave uncovered for about 2 min. and 45 sec. Remove, poke a few holes in the eggs with a fork (once or twice is fine) and microwave for another minute.

Let this sit for 3-5 minutes. After that, I recommend transferring your meal to a nice plate for a more enticing presentation. Sprinkle with oregano to finish and enjoy!
